Wine:
– 100% of the grapes must be organic or biodynamic (USDA/ Made with organic grapes/ AB/ Ecocert / Nature et Progres / Demeter /Biodyvin..)

– The harvest must be manual.
​
– No oenological input except sulphite which can be used restrictively. (See dose below)
​
– The use of indigenous yeasts for juice fermentation.
​
– No use of brutal and traumatic physical techniques (rapid pasteurization, thermovinification, tangential filtration, etc.).
​
– Maximum dose of sulphite: 30mg/litre
​

Spirits:
​
– All types of spirits organic, bio and biodynamic.
